Quick Cleanup Tips

1. Set up a soaking station in a laundry tub. When you transfer the food to serving dishes, put the cooking dishes to soak in hot, soapy water. This will free up your sink and time.

2. Double-duty cookware. The easiest way to clean up is to have cookware that goes from the oven/stove to the table. This way there is only one dish to clean.

3. Empty your refrigerator. There will be tons of leftovers that will need to go into the refrigerator. Be prepared ahead of time by having a minimum amount of stuff on the shelves thus leaving room for the new things.

4. Use aluminum foil to line baking pans or use disposable pans. Either of these suggestions will eliminate the clean up after cooking.

Your oven is working full time during the holidays and it can be a juggling act getting everything ready at the same time. Don’t despair. The following recipes can be prepared outside the oven and ready when you are.

Apple Cranberry Pecan Stuffing

3 cups apple juice

1 cup dried cranberries

½ cup margarine

2 pkg. Stove Top stuffing for chicken

2 small apples, chopped

½ cup chopped, toasted pecans

Bring juice and margarine to boil in medium saucepan on high heat. Stir in apples, cranberries and stuffing mix. Cover. Remove from heat. Let stand 5 min. Stir in pecans. Enjoy!

Whipped Sweet Potato Bake

3 cans sweet potatoes, drained

1 tsp. ground ginger

¼ cup (1/2 stick) butter, melted

¼ tsp. ground nutmeg

1 tsp. ground cinnamon

3 cups miniature marshmallows

Beat sweet potatoes, butter, cinnamon, ginger and nutmeg in medium bowl with electric mixer on medium speed until well blended. Spoon into lightly greased 1 ½ quart casserole dish. Microwave on high 8-10 min. or until potato mixture is heated through, stirring after 5 minutes. Top with marshmallows and let stand 2-3 min. until marshmallows begin to melt.

Annual Pumpkin Giveaway

Our annual Pumpkin Giveaway was held on Sunday, October 16th , with many receiving a free pumpkin. We also held a contest to guess how many caramels were in the candy jar. Congratulations to Chris and Aerial Jelly for the closest guess. There were actually 95 caramels in the jar. They won a $25 gift certificate to Publix. A huge shout out of thanks to Red Elephant Restaurant in Mandarin for allowing us to set up in front of their restaurant. Our next community event will be held Saturday, November 5th , when we collected on Saturday, November 12th . You only need to fill the bag with non-perishable food items. We will do the collecting and dropping off at the food bank.
