Your oven is working full time during the holidays and it can be a juggling act getting everything ready at the same time. Don’t despair. The following recipes can be prepared outside the oven and ready when you are.

Apple Cranberry Pecan Stuffing

3 cups apple juice

1 cup dried cranberries

½ cup margarine

2 pkg. Stove Top stuffing for chicken

2 small apples, chopped

½ cup chopped, toasted pecans

Bring juice and margarine to boil in medium saucepan on high heat. Stir in apples, cranberries and stuffing mix. Cover. Remove from heat. Let stand 5 min. Stir in pecans. Enjoy!

Whipped Sweet Potato Bake

3 cans sweet potatoes, drained

1 tsp. ground ginger

¼ cup (1/2 stick) butter, melted

¼ tsp. ground nutmeg

1 tsp. ground cinnamon

3 cups miniature marshmallows

Beat sweet potatoes, butter, cinnamon, ginger and nutmeg in medium bowl with electric mixer on medium speed until well blended. Spoon into lightly greased 1 ½ quart casserole dish. Microwave on high 8-10 min. or until potato mixture is heated through, stirring after 5 minutes. Top with marshmallows and let stand 2-3 min. until marshmallows begin to melt.
